I have all three and in my opinion Shattered Dimensions is the better of the three. Why?
It has a lot of familiar enemies, a lot of stages, 4 different spider-men to play as and has some varied stages with the respective abilities of the spider-men. The graphics are pretty good too, although you may tire from the beat-em-up gameplay. I did at a few points. Lots of value for money with achievemnts and unlockables too.
Web of Shadows is consider by many to be better, as it's more free-roaming, but in my eyes it's also very bland and full of glitches. The graphics are dire and gameplay is eh, ok. If you prefer open endedness in your Spider-Man game, avoid this and get Spider-Man 2 for the GameCube (if your Wii plays GC games). It's miles better.
Edge of Time is the weakest of the lot. It's level design is generic (lots of blocky scenery and always inside the same building) and surprisingly the graphics are really bad. It's the worst of the lot in every way, which is a bit bewildering considering it's the latest one.
